1 wedge Fresh Lime
2 fl oz Aged Rum, my favorite is havana club anejo especial
1 fl oz VSOP Peach Aged White Balsamic Vinegar
1 fl oz VSOP Honey Ginger Aged White Balsamic Vinegar
3 fl oz Peach Nectar
1 oz Ginger Beer, (optional) or ginger ale or lemon thyme infused simple syrup

Add ice to a large cocktail shaker. Crush the lemon thyme with your fingers to release the essential oils. Squeeze the lime wedge into the shaker.

Add all of the liquid ingredients to the shaker. Shake vigorously to mix the cocktail. Strain into a chilled martini glass, garnish with a lime wedge and a sprig of lemon thyme. Enjoy!!!
