 8 Eggs, soft-boiled
 1 lb Italian Sausage
 ¾ cup Flour
 1 ½ cups Panko Bread Crumbs
 2 large Egg
  Salt and Pepper, to taste
 ½ cup Mayonnaise
  cup Maple Syrup
 2 tsp Canned Chipotle Peppers in Adobo Sauce, minced
  Canola Oil

Put a thin coating of sausage around the eggs. Be sure sausage is cold when this is done.

In one bowl, add the flour and season with salt and pepper, in another bowl, add the bread crumbs, and in a third bowl, whisk the eggs. Dip the sausage-wrapped eggs into the flour, then the eggs, then the breadcrumbs. Refrigerate until oil is heated if not frying right away.

Combine mayonnaise, maple syrup, and chipotle peppers and serve in individual ramakens.

Heat oil in a deep cast-iron pan or deep fryer to 350 degrees. Fry eggs in oil for 5 minutes, or until they have turned a golden brown color
