2 lbs Boneless Skinless Chicken Breast
32 oz Salsa
8 oz Sour Cream
½ cup Instant Rice, if desired (helps firm up a batch that is too liquid)

Place chicken in bottom of pressure cooker, followed by salsa. Cook on Poultry setting, then shred or chop chicken. If we are eating it with tortillas we might add the instant rice to absorb some of the liquid. Then add sour cream. Serve with shredded cheese.
