 ¼ cup VSOP Serrano Honey Vinegar
 1 small Lime, zested & juiced
 ½ cup VSOP Cilantro & Roasted Onion Extra Virgin Olive Oil
 1 pinch Fresh Cracked Black Pepper, to taste
 3 lbs Seedless Watermelon, rind removed, cut into large dice (about 6 cups)
 ½ cup Feta Cheese, crumbled
 2 tbsp Fresh Cilantro, for garnish (optional)

In a small bowl, add the zest and juice of one lime. Add the Serrano Honey Vinegar. Slowly drizzle in the EVOO while whisking. Season with black pepper.

Refrigerate the watermelon until ready to serve. Place the watermelon and feta cheese into a large bowl. Dress salad with desired amount of dressing and gently toss to combine. Place on serving platter and garnish with cilantro if desired. Enjoy!
